Stuffed Potato with Ham, Sweet Corn and Chives

The variations on this simple dish are endless. Use your favourite combinations. The potatoes can be baked in the oven or for speed – cooked in the microwave.

Serves: 4, Cooking Time: 1 Hour - oven 10 Min - microwave, Preparation Time: 10 Min.

Ingredients
4 large Rooster potatoes
150 g/6 oz sweetcorn niblets
100 g/4 oz chopped cooked ham
25 g/1 oz low fat butter spread
Small bunch of chopped chives
50 g/2 oz Mozzarella cheese, grated
Olive oil
Salt and pepper

Method

  • Oven method – prick the potatoes, rub the skins with olive oil and salt and bake in the oven at 180°C/350°F/Gas mark 4 for 1 hour until tender.
  • Microwave method – prick the potatoes and place in microwave and bake for about 2-3 minutes each side, 10 –12 minutes in total.
  • Remove from the oven, slice the top off each potato and discard.
  • Scoop out the potato flesh and mash in a bowl with the margarine, salt and pepper. Stir in the sweet corn, ham and chives.
  • Refill the potato skins generously and top with the mozzarella cheese.
  • Reheat the potatoes in the oven until the cheese is melted and the filling warmed through.
  • Or reheat in microwave and melt cheese under the grill.
